Chicken Sandwich Extraordinaire Recipe uses boneless chicken breast, hamburger or hoagie bun, mayonnaise, butter, garlic powder, House Autry Chicken Breader and shredded lettuce to create a very favorful and tasty chicken sandwich.

INGREDIENTS
|
1 8 oz boneless chicken breast (see Note:)
|
2 4 1/2 in. hamburger buns
|
1 1/2 Tbl. mayonnaise, for spreading
|
1/2 tsp. garlic powder
|
shredded lettuce
|
House Autry Chicken Breader (see Note:)
|
oil, for frying
|
2 tsp. butter, for spreading
|
|
|

DIRECTIONS
|
1:
Note: store-bought boneless skinless chicken breasts may be used or a chicken breast with bone-in may be used - remove breast bone and skin, then split chicken breast horizontally length-wise resulting in two breast pieces about 1/2 inch thick.

Note: House Autry Chicken Breader is an excellent breading for anything fried, for example, pork chops, pork steak, chicken or browning meat. It adds a very nice taste to anything fried and is important for this recipe to achieve the great flavorful taste of this sandwich. If a must, bread the breast as you would normally bread anything.

Spread butter on cut side of top and bottom of bun. Lightly sprinkle the butter with garlic powder. Turn griddle or utensil being used to toast bun to medium high. Coat chicken with breader and set aside. Put enough oil in pot to cover chicken and prevent chicken from touching the bottom of the pot. Rapidly heat oil to 350°F or to where a pinch of breader dropped into the oil sizzles.

Just before oil reaches proper temperature, coat chicken with another coating of breader. Place buttered buns on griddle. Gently add breast to hot oil. A 1/2 inch thick breast should cook in about 4 minutes. Turn breast at least once while cooking. Check with thermometer, ideally, or cut breast to ensure it is done. Remove buns from griddle and spread top and bottom with mayonnaise. Place breast on bottom of bun, top with shredded lettuce, serve and enjoy!
