Coconut Fried Shrimp Recipe marries the sweet taste of shrimp with all-purpose flour, milk, baking powder, curry and shredded coconut then fries the shrimp to a delicious golden brown.

INGREDIENTS
|
2 pounds peeled, deveined large
shrimp, fresh or frozen (tail
section may be left on)
|
2 cups all-purpose flour
|
1 1/2 cups milk
|
1 1/2 teaspoons baking powder
|
1 teaspoon curry
|
1/2 teaspoon salt
|
2 cups shredded coconut
|
Vegetable oil for deep-frying
|
Sweet and Sour Sauce (search recipes)

DIRECTIONS
|
1:
Thaw shrimp if frozen. Measure 1/2 cup of flour and set aside.

In a 1-quart mixing
bowl, combine the remaining 1 1/2 cups flour, milk, baking powder, curry and salt. Place reserved flour and coconut in two separate shallow pans.

Dredge shrimp in
flour, dip in batter, then roll in coconut. Fry in hot oil at 350 degrees, until coconut is
golden brown. Drain on absorbent paper before transferring to warming tray. Serve
hot with Sweet and Sour Sauce.
