Deviled Crab Recipe creates a delicate yet robust appetizer or main dish using crab meat, butter, flour, milk, mayonnaise, lemon juice, parsley, Worcestershire sauce, onion, horseradish, hot pepper sauce, nutmeg, bread crumbs and paprika.

INGREDIENTS
|
1 pound blue crab meat, fresh,
frozen or pasteurized
|
6 tablespoons butter or margarine,
melted
|
3 tablespoons all-purpose flour
|
1 cup milk
|
1/4 cup mayonnaise or salad dressing
|
2 tablespoons lemon juice
|
1 tablespoon chopped parsley
|
2 teaspoons Worcestershire sauce
|
2 teaspoons grated onion
|
2 teaspoons cream-style prepared
horseradish
|
1/2 teaspoon liquid hot pepper sauce
|
1/2 teaspoon salt
|
1/8 teaspoon pepper
|
1/8 teaspoon nutmeg
|
1 tablespoon melted butter or margarine
|
1/4 cup dry bread crumbs
|
Paprika
|

DIRECTIONS
|

Thaw crab meat if frozen. Preheat oven to 350 degrees. Remove any remaining shell or
cartilage.

Melt 6 tablespoons butter in a l-quart saucepan; blend in flour. Gradually
add milk and cook, stirring constantly, until thickened. Add mayonnaise, lemon juice,
parsley, Worcestershire sauce, onion, horseradish, liquid hot pepper sauce, salt, pepper
and nutmeg; blend well.

Combine sauce and crab meat. Spoon mixture in 6 well greased
ramekins or shells. Combine 1 tablespoon butter and bread crumbs; sprinkle
over top of crab meat. Sprinkle with paprika.

Bake at 350 degrees for 20 to 25 minutes
or until golden brown.
