Shrimp Chow Mein is actually chop suey and sautees onion, green pepper, celery, bean sprouts then sauces all with cornstarch, soy sauce and sugar and serves over chow mein noodles and rice in this delicious shrimp chow mein recipe.

INGREDIENTS
|
1/2 lb. fresh or frozen shrimp
|
1 1/2 T butter or peanut oil
|
1/4 C chopped onion
|
1/2 green pepper, cut in 2-inch strips
|
1 C hot water
|
1 C celery, cut in 2-inch strips
|
3/4 t salt
|
Dash of pepper
|
1 No.2 can bean sprouts, drained
|
2 T cold water
|
2 T cornstarch
|
2 t soy sauce
|
1 t sugar
|
Chow mein noodles
|
Hot boiled rice
|

DIRECTIONS
|

Remove shells and black vein from shrimp. Rinse in cold water and cut in half, then again in half lengthwise. Melt butter in large heavy skillet over medium heat. Add onion and green pepper and cook 5 minutes.

Add hot water, celery, salt, pepper, bean sprouts, and shrimp. Cover and simmer 5 minutes or until celery is tender but still slightly crisp.

Combine cold water, cornstarch, soy sauce, and sugar; stir lightly into hot mixture and cook uncovered 4 minutes longer.

Serve on chow mein noodles with rice. Note: You can use 1 5oz can shrimp or 1 package frozen cooked shrimp (first thaw). Add these with cornstarch mixture at the end.
