Bahia-Style Mussels Recipe uses delicious mussels combined with cream cheese, Italian Dressing, coconut milk, diced tomatoes, cilantro, cooked rice and chopped onions to make a very tasty mussel dish served over rice.


INGREDIENTS
1/4 cup Kraft Zesty Italian Dressing
1-1/2 cups chopped onions
2/3 cup lite coconut milk
4 oz.(1/2 of 8-oz. pkg.) Philadelphia Cream Cheese, cubed
1 can (14-1/2 oz.) diced tomatoes with roasted garlic and onion, drained
2 Tbsp. each: chopped cilantro and fresh parsley
2 lb. mussels, scrubbed, beards removed
2 cups hot cooked rice


DIRECTIONS
1: Heat dressing in large saucepan on medium-high heat. Add onions; cook and stir 10 min. or until lightly browned and tender.
 
2: Add coconut milk and cream cheese; stir with wire whisk until well blended. Add tomatoes, cilantro and parsley; stir. Bring to boil.
 
3: Stir in mussels; cover. Reduce heat to medium-low; simmer 5 to 6 min. or until all mussels have opened. (Discard any unopened mussels.) Serve over rice.
