Vegetables and Beef Stew Recipe is a hearty and robust stew with potatoes, stew beef, carrots, green peppers, flour, bay leaf, onions, shortening, salt and pepper which meld together to create a very tasty and delicious beef stew recipe.

INGREDIENTS
|
2 lb. boneless stew beef
|
1/2 c. flour
|
3 tsp. salt
|
4 tbsp. shortening
|
2 1/2 c. water
|
1 bay leaf
|
12 sm. white onions
|
12 sm. potatoes
|
4 med. carrots
|
1 med. green pepper
|
1/2 tsp. pepper
|
|
|

DIRECTIONS
|
1:
Trim excess fat from the beef and discard. Combine the flour and salt in a paper
bag. Add the beef and shake to coat well. Brown in the shortening in a Dutch
oven or a 3-quart saucepan. Add the water and bay leaf and cover. Cook over
moderate heat for 1 hour and 30 minutes or until beef is almost tender.

Peel the
onions and potatoes. Cut the carrots into 1 1/2-inch lengths and green pepper
into 3/4-inch strips.

Add the onions, potatoes, carrots and green pepper to beef
and cover.

Cook for 30 minutes or until vegetables are tender. Add the pepper
and serve hot.
