INGREDIENTS
|
1 medium onion, chopped
|
2 cloves garlic, minced
|
1 cup carrots, chopped
|
1 tbsp chili powder
|
1 tsp dried oregano, crushed
|
1 small jalapeno pepper, seeded, chopped
|
1/2 tsp table salt
|
1/2 tsp black pepper, freshly ground
|
2 lbs. pork tenderloin, trimmed, cut into 1-in chunks
|
1 15oz can black beans, drained and rinsed
|
1 15oz can pinto beans, drained and rinsed
|
1 15oz can kidney beans, drained and rinsed
|
1 cup canned tomato puree
|
1 29oz can diced tomatoes with green pepper, celery, and onion, not drained
|
6oz tomato paste
|

DIRECTIONS
|
1:
Combine onion, garlic, carrots, chili powder, oregano, jalapeño, salt, and black pepper in 5- to 6-quart slow cooker and stir.

Add remaining ingredients and stir again.
|
|

Cover and cook until pork is very tender, 6–8 hours on Low or 3–4 hours on High.
