New Hampshire Meat Soup Recipe makes meatballs with ground lamb and pork, onion, red pepper, nutmeg and egg then coat with flour before browning in butter then adds beef stock, bread crumbs, tomato sauce and parsley to create this soup recipe.


INGREDIENTS
1/2 lb ground lamb
1/2 lb ground pork
1 large onion
1/2 tsp salt
Dash black pepper
Dash red pepper
Pinch nutmeg
2 eggs
Flour
Butter
6 cups beef stock
1/2 cup toasted bread crumbs
2 Tbl tomato sauce
2 Tbl chopped parsley


DIRECTIONS
1: Mince onion. Combine lamb, pork, onion, salt, peppers, nutmeg and eggs; mix well.
 
2: Form meat mixture into small ball; roll balls in flour.
 
3: Melt butter in frypan. Add meatballs; cook until evenly browned.
 
4: Heat stock in kettle; add crumbs, tomato sauce, parsley, meatballs and pan juices. Simmer for 15 minutes.
