Family Style Vegetable Beef Soup

Family Style Vegetable Beef Soup Recipe uses top round, Italian seasoning, stewed tomatoes, frozen vegetables, salt, black pepper, garlic powder, chicken broth, beef bouillon and onion to create a full flavored very tasty vegetable beef soup.


INGREDIENTS
1 1/2 lb. top round (see Note)
vegetable oil
4 14.5 oz cans chicken broth, unsalted
8 cups water
1/2 medium onion, chopped (1/4 inch size)
1 tsp Italian seasoning
1 Tbl beef bouillon granules
1/2 tsp black pepper
1 tsp garlic powder
salt, to taste
1 14.5 oz can stewed tomatoes, diced
24 oz diced frozen vegetables, carrots, corn, green beans, etc.


DIRECTIONS
1: Note: top round is not the most tender cut of meat because it is very lean. Cuts with more fat content will be more tender, but also more expensive. This recipe accounts for the use of top round in the cooking process. It is recommended that the saltiness of the broth be checked as the meat nears the desired tenderness, before adding any salt to the soup. This recipe yields about 1 gallon of soup, enough for about 6 hearty appetites.
 
2: Cut meat into 1/2 inch cubes. Brown meat in vegetable oil, set aside. Place chicken stock and water into large pot, bring to boil. Add browned meat to pot, stirring to prevent cubes from sticking together. Reduce to simmer. Add onions to pot after meat has simmered about 10 minutes. Note: top round will take about 30 minutes of simmering to become tender. Regardless the cut of meat used, occasionally check a cube to determine tenderness. If meat is tender before 30 minutes, proceed to next step.
 
3: After meat has simmered about 20 minutes, add all ingredients except tomatoes and frozen vegetables, stir well.
 
4: When meat is tender, check broth to determine if salt needs to be added, to taste. Add tomatoes and frozen vegetables, stirring to mix well. Bring soup to a boil. Reduce heat and simmer for 10 minutes. Serve and enjoy. (Soup freezes well.)
