Last Minute Lima Bean Supper Recipe sautees onion and green pepper in butter before blending in flour and milk until thick and smooth then adding cooked ham, Amercian cheese, hard-cooked eggs, cooked large dry limas and pimientos.

INGREDIENTS

1 small onion
|
1/4 cup minced sweet green pepper
|
1/4 cup butter or margarine
|
1/3 cup sifted enriched flour
|
1 teaspoon salt
|
2 cups milk
|
1 cup cooked ham, chicken, or tuna pieces
|
1/2 cup grated American cheese
|
3 quartered hard-cooked egg
|
3 cups cooked large dry limas (about 1 1/2 cups before cooking)
|
1/4 cup minced pimiento
|

DIRECTIONS
|
1:
Chop onion fine and cook with green pepper in butter until soft. Blend in flour and salt. Add milk slowly, stirring constantly.

Continue cooking until smooth and thick, about 5 minutes. Add all remaining ingredients.

Keep hot on top of stove until ready to serve. Or, turn into casserole, top with buttered crumbs, if desired, and heat in moderate oven (350°F.) until bubbly and hot.

Menu Suggestion: Serve with chilled
greens, enhanced with tomato and avocado
slices, crisp rolls, and coffee.
