Fresh Asparagus with Cream Sauce

Fresh Asparagus with Cream Sauce Recipe boils fresh asparagus in salty water then serves with a delicious sauce made with butter, flour, milk, cream, hard-boiled egg and lemon juice.


INGREDIENTS
2 lb. fresh asparagus
1/4 c. margarine or butter
1/4 c. flour
3/4 c. milk
3/4 c. cream
2 hard-boiled eggs, minced
2 tbsp. fresh lemon juice


DIRECTIONS
1: Cook the asparagus in boiling, salted water until tender, then drain. Keep warm.
 
2: Melt the margarine in a saucepan. Add the flour and mix well. Stir in the milk and cream and cook, stirring constantly, until smooth and thick.
 
3: Reserve 1 teaspoon egg.
 
4: Add remaining egg to sauce and mix well. Place the asparagus in a serving dish and sprinkle with lemon juice. Place the cream sauce in a serving bowl and sprinkle with reserved egg.
