Fresh Asparagus with Cream Sauce Recipe boils fresh asparagus in salty water then serves with a delicious sauce made with butter, flour, milk, cream, hard-boiled egg and lemon juice.

INGREDIENTS
|
2 lb. fresh asparagus
|
1/4 c. margarine or butter
|
1/4 c. flour
|
3/4 c. milk
|
3/4 c. cream
|
2 hard-boiled eggs, minced
|
2 tbsp. fresh lemon juice
|
|

DIRECTIONS
|
1:
Cook the asparagus in boiling, salted water until tender, then drain. Keep warm.

Melt the margarine in a saucepan. Add the flour and mix well. Stir in the milk
and cream and cook, stirring constantly, until smooth and thick.

Reserve 1 teaspoon egg.
|

4:
Add remaining egg to sauce and mix well. Place the asparagus in a
serving dish and sprinkle with lemon juice. Place the cream sauce in a serving
bowl and sprinkle with reserved egg.
