Celery and Cheese Casserole Recipe cooks celery with butter and crumbled tarragon leaves, covers with sauce of flour, milk, cream of chicken soup, cheddar cheese and paprika then bakes to create a unique and delicious celery casserole.

INGREDIENTS
|
1 bunch fresh celery
|
3 tbsp. butter or margarine
|
1/4 c. water
|
1/2 tsp. crumbled tarragon
leaves
|
2 tbsp. flour
|
1/2 c. milk
|
1 can cream of chicken soup
|
1/2 c. grated Cheddar cheese
|
1/4 tsp. paprika
|
|

DIRECTIONS
|
1:
Preheat oven to 350 degrees. Trim the celery and cut ribs into 1/2-inch diagonal
pieces. Combine the celery and 1 tablespoon butter, water and tarragon in a
medium saucepan and bring to boiling point. Cover. Reduce heat and simmer for
10 minutes.

Turn into a 2-quart casserole and set aside.

Heat remaining butter in
the same saucepan. Stir in the flour and brown lightly. Add the milk gradually
and cook, stirring, until smooth. Add the undiluted soup and heat through. Stir
in the cheese.

Pour over the celery and mix lightly. Sprinkle with paprika. Bake
for 15 minutes or until bubbly. Serve hot.
