Fried Eggplant Recipe fries sliced eggplant after dipping in egg and then coating with a mixture of bread crumbs, salt and pepper to create a delicious and tasty eggplant dish.

INGREDIENTS

2 sm. eggplant
|
|
1 egg, beaten
|
|
1 c. bread crumbs
|
|
1 tsp. salt
|
|
Dash of pepper
|
|
|

DIRECTIONS
|
|
1:
Rinse the eggplant and slice. Dip in egg. Mix the bread crumbs, salt and pepper
and coat eggplant slices with bread crumbs. Fry in small amount of fat or oil in a
skillet over low heat for about 3 minutes on each side.
