Stuffed Zucchini Recipe uses zucchini, which is delicious on its own, an gently boils the zucchini before stuffing with crumbled bacon and fresh cooked corn then baking to create this wonderful stuffed zucchini recipe.

INGREDIENTS
|
3 fresh zucchini
|
3 slices bacon
|
2 c. fresh corn, cut from cob
|
Salt and pepper to taste
|

DIRECTIONS
|
1:
Cut the zucchini in half and remove pulp. Cook in boiling, salted water until
almost done, then drain.

Fry the bacon in a skillet until crisp. Remove from
skillet, then drain and crumble. Add the corn, salt, pepper and 1 cup water to
drippings in skillet and cook over low heat, stirring frequently, until water has
evaporated.

Stir in the bacon, then place in cavities of zucchini. Place in a baking
pan and pour small amount of water into the pan. Bake at 350 degrees for 30
minutes.
