Fresh Collard Greens Recipe uses fresh collards seasoned with vinegar, salt, butter and sugar to create this very tasty fresh collards recipe.

INGREDIENTS
|
3 to 4 heads of fresh collards
|
4 oz. white vinegar
|
1 tsp salt
|
2 oz. butter or margarine
|
2 oz. sugar
|
3 pieces of bacon.

DIRECTIONS
|

NOTE: this recipe is for what would equate to a Number 10 can of collards or 12 to 13 cups. For reference, a gallon is 16 cups. The measurement would be with collards just covered with water, after boiling, with the pot being mostly filled with wilted collards. If your quantity is close to a gallon, use the full measure of the seasonings. If you have 1/2 gallon, use 1/2 of the seasonings.

Cut the ribs out of the individual collard leaves. After all ribs are removed, wash each leaf to remove any dirt from the leaves. Roll each leaf into the shape of a cigar. Cut each leaf cigar into 1 1/2 inch segments, then cut each segment in half.

Fill a large pot about 3/4 full with water and bring to a boil. Once the water is boiling, gradually add collards and stir. Collards will wilt down. Add all collards to the pot and return to a boil. Boil the collards, stirring occasionally, for 20 minutes. While the collards are boiling, cut the bacon into 2 inch segments and cook to render bacon fat. Remove the bacon segments to a plate and reserve the bacon fat.

After 20 minutes of boiling, reduce collards to a simmer. Add bacon fat and bacon segments to the collards along with the vinegar, salt, sugar and butter. Stir well. Simmer covered for 45 minutes, stirring occasionally. Collards freeze well. Serve and enjoy!!
