Ejotes y Papas Green Beans and Potatoes Recipe steams green beans and red potatoes, tosses them in oil and vinegar dressing and serves them on a bed of green leaf lettuce complemented with cilantro and capers .

INGREDIENTS
|
1 pound small green beans,
ends removed
|
6 small red potatoes, quartered
|
1/2 cup Oil and Vinegar Dressing (search recipes)
|
2 tablespoons cilantro leaves,
chopped
|
1 tablespoon capers
|
Green leaf lettuce
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
DIRECTIONS
|
1:
Place potatoes in a steamer and
arrange green beans on top. Cover
tightly and steam until barely
tender (approximately 15 minutes).
Do not overcook. Place vegetables in
a bowl and mix with the dressing.
Chill 3 hours.

2:
Just before serving mix in the
cilantro and capers. Line a platter or
individual plates with lettuce leaves
and arrange vegetables on the lettuce.
