Frijoles de Olla Beans from the Pot Recipe brings dry pinto beans in water and lard or oil to a boil and then simmers before adding salt toward the end of cooking to create a delicious and tasty pinto bean dish.

INGREDIENTS

2 cups dry pinto beans
|
8 to 10 cups water
|
2 tablespoons lard or oil
|
2 teaspoons salt, or to taste
|

DIRECTIONS
|
1:
Pick through and wash the beans.
Do not soak.
|
|
2:
Place beans, water, and lard in a
large pot. Bring to a boil, reduce
heat, cover, and simmer until the
skins have begun to split (2 to
2 1/2 hours). Add the salt and continue
to cook until the beans are very
tender (about 30 minutes longer).
