Baked Yellow Squash Recipe slices yellow squash, lightly seasons with salt, pepper and Italian Seasoning and then bakes them to create a delicious yellow squash recipe.

INGREDIENTS
|
2 lbs. yellow or Crookneck squash
|
salt
|
pepper
|
1 Tbl. Italian Seasoning
|

DIRECTIONS
|
1:
Wash and dry squash. Cut about 1/2 inch off each end of each squash. Holding a squash lengthwise firmly, cut about 1/4 inch off each side of the squash, on opposite sides, so the squash will lay flat.

After cutting each side off each squash, cut each squash lengthwise into 1/4 inch strips. Lay the strips out on a large cookie sheet or sheet pan which has been covered with parchment paper or aluminum foil. Do not overlap the strips. Preheat the oven to 400°F.

Lightly sprinkle each side of each strip of squash with salt, pepper and Italian Seasoning.

Place the cookie sheet onto the middle rack of the oven positioning the cookie sheet from left to right. After the squash has baked for 10 minutes, turn each squash strip over and bake for another 10 minutes. Remove from oven and serve.
