Pan Fried Rutabaga Latkes Recipe uses fresh rutabaga, scallion, egg, flour, salt, pepper, ground nutmeg and vegetable oil in creating this tasty rutabaga recipe.

INGREDIENTS
|
1 to 2 lb. rutabaga
|
2 scallions, cut at 1/4 inch bias
|
1 egg, lightly beaten
|
2 Tbl. flour
|
1 tsp. salt
|
1/2 tsp. black pepper, ground
|
1/4 tsp. nutmeg, ground
|
Vegetable oil, for pan frying
|

DIRECTIONS
|
1:
Peel rutabaga. Rutabaga must be grated. Cut rutabaga into pieces to facilitate grating, either with a box grater or with a food processor. Grate rutabaga and place into large bowl.

Add ingredients individually, mixing thoroughly after each addition.

Place large skillet over medium-high heat. Add enough vegetable oil to cover bottom of skillet.

Using your hands, take 2 or 3 tablespoons of the rutabaga mixture and form into latkes about 3/4 inch high and 3 inches round. Place latkes into hot oil and fry until golden brown. Turn latkes over and fry second side until golden brown. Repeat until all of the rutabaga mixture is used. Serve.
