Stewed Tomatoes Recipe uses bell pepper, onion, celery, garlic, Italian Seasoning, sugar, salt, pepper, celery seed, parsley flakes, olive oil, vinegar and tomatoes to create this very tasty stewed tomatoes recipe.

INGREDIENTS
|
1 15 ounce can whole tomatoes (see note)
|
1/3 cup bell pepper, diced
|
1/2 cup onion, diced
|
1/3 cup celery, diced
|
1/2 Tbl. garlic, minced
|
1 Tbl. Italian Seasoning
|
1 tsp. sugar
|
1/2 tsp. salt
|
1/4 tsp. black pepper
|
1/4 tsp. celery seeds
|
1/4 tsp. parsley flakes, dried
|
1 Tbl. olive oil
|
2 Tbl. vinegar
|
|

DIRECTIONS
|

Note: Fresh tomatoes may also be used, if desired. If fresh tomatoes are used, cut the stem out of 3 large tomatoes. Place enough water into a large pot to allow the tomatoes to float in the pot. Bring the water to a boil and slowly lower the tomatoes into the water. Remove tomatoes when skins split. Rinse tomatoes under cold water. Peel tomatoes and cut into chunks.

Place a large sauce pot over medium-high heat. Add the olive oil to the pot. Once oil begins to shimmer, add the pepper, onion and celery and stir well. Sauté the vegetables until they are soft. Add garlic and stir well. Cook garlic about a minute not allowing the garlic to brown or burn.

Add the tomatoes to the pot and stir well. Add the remaining ingredients, stirring well after each addition.

Reduce heat to low and slowly simmer the tomato mixture until the mixture is thick and all ingredients are thoroughly combined. Add a little water while cooking is needed. Tomatoes should be thick and not watery at all when done.
