INGREDIENTS
|
1 lb. okra, fresh or frozen, cut
|
1/2 cup onion, chopped
|
1 teaspoon salt
|
1/4 teaspoon pepper
|
1 large egg, beaten
|
1/2 cup water
|
1 teaspoon baking powder
|
1 pinch garlic powder, optional
|
1/2 cup flour
|
1/2 cup cornmeal
|
oil, for frying
|

DIRECTIONS
|
1:
If using fresh okra, cut across the pod to form 1/4-inch thick disks. Discarding the pointed ends and the stalk ends of the pods.

Combine cut okra, onion, salt, pepper, water and egg and mix well. Place about 1/2-inch deep oil into a large skillet over medium-high heat.

Combine flour, baking powder, cornmeal and garlic
powder. Add flour mixture to the okra mixture and stir to mix well and coat the okra with the flour mixture.

Reduce heat to medium. Drop about 1/4 cup portions into about 1/2" hot oil. Fry over medium heat until
well browned on both sides. Drain on paper towels. Fry in batches if necessary.
