Mexican Fried Rice Recipe browns long grain rice in oil then adds chili salsa, chopped green pepper, onion, garlic and water to cook rice until tender then served with extra salsa to create this delicious Mexican rice dish.

INGREDIENTS
|
1 cup long grain rice
|
1 (8-ounce) package frozen, peeled and deveined shrimp, optional
|
1 cup chili salsa
|
1/2 cup chopped green pepper
|
1 small onion, chopped
|
1 clove garlic, minced
|
|
|
|
|
|
|
|
|
|
|
|

DIRECTIONS
|
1:
In 12-inch skillet heat oil. Add rice; cook until golden brown, stirring frequently. Stir in remaining ingredients and 2 cups water. Bring mixture to boiling; reduce heat. Cover; simmer 15 to 20 minutes or until rice is tender. Season to taste; serve additional salsa, if desired. Makes 6 servings.
