Sweet Potatoes Casserole

Sweet Potatoes Casserole Recipe mashes baked sweet potatoes and combines them with butter, eggs, vanilla extract, cinnamon, sugar, heavy cream and tops with flour, brown sugar and butter to create this delicious sweet potato casserole recipe.


INGREDIENTS
5 sweet potatoes
1/4 teaspoon salt
1/4 cup butter
2 eggs
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/2 cup sugar
2 tablespoons heavy cream
For the topping:
1/4 cup butter
3 tablespoons all-purpose flour
3/4 cup light brown sugar
1/2 cup chopped pecans (optional)


DIRECTIONS
1: Pre-heat oven to 350°F. Wash and lightly oil potatoes. Place on baking sheet and bake in oven for 35 minutes.
 
2: Peel and finely chop potatoes and place in a mixing bowl. Mash potatoes with a potato masher until potatoes are without lumps. Add other ingredients, excluding topping ingredients. Mix well.
 
3: Pour potato mixture into a 9x13" oven proof casserole dish.
 
4: Mix together all ingredients for topping. Spread over top of potato mixture in the casserole dish. Bake for 30 minutes in 350°F. oven. Brown topping under broiler, if desired, checking every few minutes for desired browness.
