Spinach with Eggs Recipe sautes garlic, gently fries spinach, mixes egg seasoned with nutmeg with cream before topping with buttered bread crumbs and baking to make this very tasty egg and spinach recipe.

INGREDIENTS
|
3 tablespoons olive oil
|
1 clove garlic, finely chopped
|
2 lb spinach, washed and
picked over
|
salt, pepper, grated nutmeg
|
4 eggs
|
4 tablespoons cream
|
3/4 oz. breadcrumbs
|
3/4 oz. butter
|
|
|
|

|
|
|
|
|

DIRECTIONS
|
1:
Heat the oil in a pan and fry the garlic for 1 minute. Add the spinach, cover, and fry gently for 3 minutes. Season with salt, pepper and nutmeg.

Beat the eggs and cream together and mix with the spinach.
|

Grease an ovenproof dish and put the
spinach mixture into it. Sprinkle on the breadcrumbs, and dot the top with butter.

Bake at 425°F for 10 minutes. Remove from the oven and serve.
