Asparagus Mimosa Recipe uses deliciously tasty spears of fresh tender asparagus tossed in a buttery sauce and served with a chopped egg and garnished with fresh chervil.


INGREDIENTS
8 ounces fresh asparagus
salt
ground black pepper
1/4 cup butter, melted
squeeze of fresh lemon juice
2 eggs, hard-cooked and chopped
1 tablespoon chopped fresh chervil


DIRECTIONS
1: Trim the asparagus stalks and peel off the tough outer layers at the base with a vegetable peeler.
 
2: Poach the asparagus spears in lightly salted water, until just tender. This will take between 3-6 minutes. (Use a clean, deep frying pan if you don't have an asparagus steamer.)
 
3: Drain the asparagus well and arrange on two small plates or one large one. Season well.
 
4: Mix the melted butter with the lemon juice. Trickle over the spears, sprinkle with the eggs and garnish with the chervil. Serve warm.
