Asparagus Mimosa Recipe uses deliciously tasty spears of fresh tender asparagus tossed in a buttery sauce and served with a chopped egg and garnished with fresh chervil.

INGREDIENTS
|
8 ounces fresh asparagus
|
salt
|
ground black pepper
|
1/4 cup butter, melted
|
squeeze of fresh lemon juice
|
2 eggs, hard-cooked and chopped
|
1 tablespoon chopped fresh chervil
|
|

DIRECTIONS
|
1:
Trim the asparagus stalks and peel off the tough outer layers at the base with a
vegetable peeler.

Poach the asparagus spears in lightly
salted water, until just tender. This will
take between 3-6 minutes. (Use a clean,
deep frying pan if you don't have an
asparagus steamer.)

Drain the asparagus well and arrange on two small plates or one large one. Season well.

Mix the melted butter with the lemon juice. Trickle over the spears, sprinkle with the eggs and garnish with the chervil. Serve warm.
