Caribbean Rice Recipe creates a paste with parsley, peppercorns, garlic, scallionsand thyme then browns rice adds chicken broth, bay leaf, green hot pepper or cayenne pepper plus paste and cooking to create this delicious rice dish.

INGREDIENTS
|
4 parsley sprigs
|
3 peppercorns
|
2 garlic cloves
|
2 scallions or green onions,
cut in pieces
|
1 1/2 teaspoons salt
|
1/2 teaspoon thyme
|
2 tablespoons peanut oil
|
2 cups rice
|
4 1/2 cups chicken broth
|
1 bay leaf
|
1 green hot pepper or 1/2 teaspoon- cayenne or red pepper
|

DIRECTIONS
|
1:
In a mortar, pound parsley, peppercorns, garlic, scallions, salt, and thyme to a paste. Set aside.

Heat oil in a large, heavy saucepan; add rice. Stir until all the rice is coated with oil and turns chalky.

Add seasoning paste and chicken broth; bring to a boil. Reduce heat and add bay leaf and pepper. Cover saucepan and cook undisturbed for 20 minutes.

Remove the cover; continue to cook over low heat for 5 minutes, or until no liquid remains. Discard bay leaf and whole pepper. Fluff rice and serve.
