Steamed Yellow Squash Recipe uses tender yellow squash which is steamed in chicken broth enhanced with onion, parsley, mint, oregano, butter, salt and pepper to create a delicious yellow squash dish.


INGREDIENTS
1 large onion, chopped medium
1 Tbl minced parsley
1 tsp mint
1 tsp oregano
salt and pepper to taste
1 cup chicken broth
3 Tbl butter
2 pounds, small yellow squash, sliced into 1/4-inch rounds
1 can (10 ounces) plum tomatoes, optional


DIRECTIONS
1: Combine all ingredients except squash.
 
2: Bring to a boil.
 
3: Add squash.
 
4: Reduce heat and simmer about 15 minutes, or until squash is tender.
