Stuffed Baked Sweet Potatoes Recipe bakes sweet potatoes then combines pulp with banana, butter, orange juice, brown sugar, salt and then tops with chopped pecans to finish bake with this tasty stuffed sweet potato recipe.

INGREDIENTS

4 medium sweet potatoes,
washed
|
1 small ripe banana, peeled
|
2 tablespoons butter or
margarine
|
1/3 cup fresh orange juice
|
1 tablespoon brown sugar
|
1 1/2 teaspoon salt
|
1/4 cup chopped pecans
|
|

DIRECTIONS
|

Bake sweet potatoes at 375°F 45 minutes to 1 hour, or until tender when tested with a fork.

Cut a lengthwise slice from each potato. Scoop out sweet potatoes into a bowl; reserve shells. Mash banana with potatoes; add butter, orange juice, brown sugar, and salt
and beat thoroughly. Spoon mixture into shells. Sprinkle with pecans. Set on a cookie sheet.

Return to oven 12 to 15 minutes, or until heated.
