Grilled Shrimp with Tomatoes Garlic and Fennel Recipe marinates shrimp in olive oil, lemon juice, fennel seed, garlic and salt and pepper before skewering with cherry tomato and grilling to create a delicious shrimp dish.

INGREDIENTS
|
1/4 cup olive oil
|
1/4 cup lemon juice
|
Grated rind of 1 lemon
|
2 tablespoons crushed fennel
seed
|
1 tablespoon minced garlic
|
Salt and pepper to taste
|
3 pounds jumbo shrimp, shelled
and deveined
|
30 cherry tomatoes
|
Additional lemon juice
|
Toasted Bread Rounds
|
|
|
|

DIRECTIONS
|
1:
In a large bowl whisk together olive oil, lemon juice, lemon rind, fennel seed, garlic, and salt and pepper. Stir in shrimp, cover,
and marinate in the refrigerator for
3 to 4 hours, or overnight.

2:
Preheat broiler or prepare a charcoal
fire. Thread each of 30 skewers with a shrimp, a cherry tomato, and another shrimp. Broil or grill until shrimp are bright pink and fairly firm; do not overcook. Sprinkle
with a little more salt and pepper and
brush with a little lemon juice. Pile skewers on a platter and serve with Toasted Bread Rounds.
