Beef on Tomato Medallions Recipe tops baked tomatoe slices with beef sirloin which has been stir fired in a blend of sesame oil, green onions, soy sauce and white wine to create this delicious beef and tomato dish.

INGREDIENTS
|
3 large ripe tomatoes
|
Salt
|
Freshly ground pepper
|
1 tablespoon vegetable oil
|
1/2 teaspoon sesame or walnut oil
|
2 1/2 pounds lean beef sirloin
steak, boneless, cut in thin slices
|
2 bunches green onions, cut in 3/4-inch pieces
|
1 tablespoon light soy sauce
|
2 tablespoons dry white wine
|
1/4 teaspoon sugar
|
1/2 teaspoon salt
|

DIRECTIONS
|

Slice each tomato into 4 slices horizontally. Sprinkle with salt and pepper. Bake on a cookie sheet at 325°F until hot (about 15 minutes).

Heat vegetable and sesame oils in a wok or skillet until hot but not smoking. Add meat, stirring to coat pieces. Cook 1 minute. Add green onions. Cook and stir 1 minute. Mix
soy sauce, wine, sugar, and 1/2 teaspoon salt; pour over meat. Cook and stir until meat is done (about 3 minutes).

Overlap 2 tomato slices at the side of each serving plate. Arrange meat mixture on plates, partially covering tomatoes.

Note: Sesame and walnut oils can be purchased in specialty or gourmet shops. These oils have a delicate but distinct flavor which provides an interesting accent in this recipe.
The oil can be omitted, or vegetable oil substituted.
