Zucchini with Salami on Fettucine

Zucchini with Salami on Fettucine sautes thinly sliced zucchini along with garlic then adds salami, capers, pepper and cream before serving on fettucine.
|
INGREDIENTS
|
2 small zucchini
|
2 cloves garlic
|
2 Tbl. olive oil
|
1/4 .lb Italian wine-cured salami
|
1 Tbl. capers, chopped
|
Peppercorns, fresh ground
|
1/2 cup whipping cream
|
Salt to taste
|
1/2 .lb fettucine, cooked
|
Fresh-grated Romano or Parmesan cheese
|
|

|
|
|
|

DIRECTIONS
|
1:
Slice the zucchini. Put several slices together and slice again into matchsticks. Slice the garlic very thin. Slice the salami thin and cut matchstick-style.

Saute the garlic in the oil until barely browned. Add the zucchini and saute for 3 minutes.

Add the salami, capers, pepper and cream. Simmer until all is very hot.
|

4:
Serve over hot fettucine. Top with cheese.
