Zucchini with Salami on Fettucine

Zucchini with Salami on Fettucine sautes thinly sliced zucchini along with garlic then adds salami, capers, pepper and cream before serving on fettucine.


INGREDIENTS
2 small zucchini
2 cloves garlic
2 Tbl. olive oil
1/4 .lb Italian wine-cured salami
1 Tbl. capers, chopped
Peppercorns, fresh ground
1/2 cup whipping cream
Salt to taste
1/2 .lb fettucine, cooked
Fresh-grated Romano or Parmesan cheese


DIRECTIONS
1: Slice the zucchini. Put several slices together and slice again into matchsticks. Slice the garlic very thin. Slice the salami thin and cut matchstick-style.
 
2: Saute the garlic in the oil until barely browned. Add the zucchini and saute for 3 minutes.
 
3: Add the salami, capers, pepper and cream. Simmer until all is very hot.
 
4: Serve over hot fettucine. Top with cheese.
