INGREDIENTS

2/3 cup Oil and Vinegar Dressing
(search recipes)
|
1/3 cup salsa
|
3 cups cooked beef cut into
thin strips
|
1 head green leaf lettuce,
torn into pieces
|
2 tomatoes, cut into wedges
|
1 cup shredded red cabbage
15 pimiento-stuffed green olives,
cut in half
|
1/2 cup garbanzo beans, drained
|
Crumbled queso fresco or
feta cheese
|
Cebolla en Lima Onions in Lime Juice (search recipes)
|

|
|
|
|

DIRECTIONS
|
1:
In a small bowl combine dressing
and salsa. Place meat in a medium
bowl and pour marinade over the
meat; cover and marinate in refrigerator
for several hours.

In a large bowl mix together the
lettuce, tomatoes, cabbage, olives,
and garbanzos. Add the meat and
dressing and toss.

Serve garnished with Cebolla en
Lima (marinated onions) and crumbled
cheese.
