Ensalada de Carne Salad with Marinated Beef

Ensalada de Carne Salad with Marinated Beef Recipe uses marinated meat in a salad of green leaf lettuce, tomatoes, cabbage, olives and garbanzo beans with oil and vinegar dressing and garnished with salsa, cebolla en lima, and queso fresco.


INGREDIENTS
2/3 cup Oil and Vinegar Dressing (search recipes)
1/3 cup salsa
3 cups cooked beef cut into thin strips
1 head green leaf lettuce, torn into pieces
2 tomatoes, cut into wedges
1 cup shredded red cabbage 15 pimiento-stuffed green olives, cut in half
1/2 cup garbanzo beans, drained
Crumbled queso fresco or feta cheese
Cebolla en Lima Onions in Lime Juice (search recipes)


DIRECTIONS
1: In a small bowl combine dressing and salsa. Place meat in a medium bowl and pour marinade over the meat; cover and marinate in refrigerator for several hours.
 
2: In a large bowl mix together the lettuce, tomatoes, cabbage, olives, and garbanzos. Add the meat and dressing and toss.
 
3: Serve garnished with Cebolla en Lima (marinated onions) and crumbled cheese.
