Christmas Eve Salad Recipe combines shredded lettuce with cooked beets, diced tart apples, orange sections, sliced bananas, diced pineapple and other toppers to create a delicious Christmas Eve Salad.

INGREDIENTS
|
1 cup diced cooked beets
|
1 cup diced tart apple, not
peeled
|
1 cup orange sections
|
1 cup sliced bananas
|
1 cup diced pineapple (fresh or canned)
|
Juice of 1 lime
|
Oil and Vinegar Dressing
|
Shredded lettuce
|
1/2 cup chopped peanuts
|
Seeds from 1 pomegranate
|
|

DIRECTIONS
|
1:
Drain beets well. Combine beets, apple, oranges,
bananas, and pineapple. Refrigerate until ready to serve.

2:
Add lime juice to beet-fruit mixture. Add desired amount of dressing and toss until evenly mixed and coated with dressing.
|

3:
To serve, make a bed of shredded lettuce in salad bowl. Mound salad on top. Sprinkle with peanuts and pomegranate seeds.
