Halibut Steaks Creole Recipe pan-fries halibut then smothers with pan-fried mixture of butter, celery, onion, green pepper, garlic, tomatoes and salt and pepper before baking creating a delicious fish dish garnished with parsley.

INGREDIENTS
|
6 slices halibut, 3/4 inch thick
|
1/4 cup butter or margarine
|
2 tablespoons oil or fat
|
1 cup chopped celery
|
1 small onion, chopped
|
1 green pepper, finely chopped
|
1 clove garlic, finely chopped
|
1 No.2 can tomatoes
|
Salt and pepper
|

DIRECTIONS
|
1:
Pan-fry halibut in butter until nicely
browned on all sides.

In another skillet, pan-fry celery, onion,
green pepper, and garlic in oil or
fat until green pepper is tender and,
onion is golden. Add tomatoes and
cook until liquid is reduced and thickened.

Arrange halibut in shallow casserole.
Pour tomato mixture over halibut. Season
with salt and pepper.

Cook in moderate oven (350°F.) 15 to 20 minutes. To serve, garnish with parsley.
