Halibut Steaks Creole

Halibut Steaks Creole Recipe pan-fries halibut then smothers with pan-fried mixture of butter, celery, onion, green pepper, garlic, tomatoes and salt and pepper before baking creating a delicious fish dish garnished with parsley.


INGREDIENTS
6 slices halibut, 3/4 inch thick
1/4 cup butter or margarine
2 tablespoons oil or fat
1 cup chopped celery
1 small onion, chopped
1 green pepper, finely chopped
1 clove garlic, finely chopped
1 No.2 can tomatoes
Salt and pepper


DIRECTIONS
1: Pan-fry halibut in butter until nicely browned on all sides.
 
2: In another skillet, pan-fry celery, onion, green pepper, and garlic in oil or fat until green pepper is tender and, onion is golden. Add tomatoes and cook until liquid is reduced and thickened.
 
3: Arrange halibut in shallow casserole. Pour tomato mixture over halibut. Season with salt and pepper.
 
4: Cook in moderate oven (350°F.) 15 to 20 minutes. To serve, garnish with parsley.
