Barbecued Fish Recipe wraps bass steaks in bacon and then basts in a mixture of barbecue sauce, dried onion, lemon, Worcestershire sauce, hot sauce and catsup while grilling to perfection.


INGREDIENTS
2 3 to 4-lb. fresh bass
8 to 10 strips bacon
1 cup bottled barbecue sauce
1 tbsp. finely diced onion
Juice of 1 lemon
Dash of Worcestershire sauce
Dash of hot sauce
Catsup to taste


DIRECTIONS
1: Cut bass crosswise into 1 1/2-inch steaks; wrap each steak with strip of bacon. Tie securely with twine. Place steaks on grill.
 
2: Combine barbecue sauce, onion, lemon juice, Worcestershire sauce, hot sauce and catsup. Brush steaks with barbecue sauce mixture.
 
3: Grill, turning and basting, until done.
