Red Mullet Roe Recipe lightly breads Mullet roe and then fries it in vegetable oil resulting in a delicate and tasty fish roe dish.

INGREDIENTS
|
1 lb. Mullet red roe
|
1/2 cup corn meal
|
2 quarts vegetable oil
|
Salt to taste
|

|
DIRECTIONS
|
1:
Place the cooking oil in a deep pot over medium-high heat and heat oil to 350°F.

Separate the two halves of the whole roe by gently pulling them apart, starting at one end and pulling down the length of the roe.

3:
Lightly salt and then bread the roe with corn meal (House Autry Seafood Breading does even better). This is easily done by placing the corn meal into a plastic bag, adding the roe, and then gently tossing the roe around inside the bag to coat.

4:
When the oil reaches 350°F, slowly and gently place the roe into the hot oil. Time the cook and remove the roe at 4 minutes.
