All American Irish Stew uses mutton or lamb, potatoes, carrots, onions, yellow turnips, parsley, sugar, flour and salt and pepper to create this robust and tasty stew.

INGREDIENTS
|
2 lb mutton or lamb
|
6 medium potatoes
|
6 medium carrots
|
6 small onions
|
1 small yellow turnip
|
3 sprigs parsley
|
2 tsp salt
|
1/4 tsp pepper
|
3 tsp sugar
|
2 Tbl flour
|
|

DIRECTIONS
|
1:
Cut mutton into 1-inch cubes; place in saucepan. Cover with cold water. Bring to a boil.

Peel and quarter potatoes; slice carrots into 2-inch pieces. Peel and quarter onion; dice turnips. Add vegetables, parsley, salt, pepper and sugar to boiling mixture.

Cover tightly. Simmer for about 2 hours and 30 minutes.

Blend flour into 1/2 cup water until smooth. Stir flour mixture into stew; cook, stirring constantly, until thickened. Cook for about 15 minutes longer, stirring frequently.
