Lobster Bisque

Lobster Bisque creates a very tasty bisque by cooking tapioca, salt, pepper, paprika, minced onion, milk and light cream in a double boiler before adding lobster and butter to complete this delicious lobster bisque.

INGREDIENTS
|
2 Tbl quick-cooking tapioca
|
1 1/4 tsp salt
|
1/8 tsp pepper
|
1/8 tsp paprika
|
1 Tbl minced onion
|
3 cups milk
|
1 cup light cream
|
1 cup lobster
|
2 Tbl butter
|
|

DIRECTIONS
|
1:
Combine tapioca, salt, pepper, paprika, onion, milk and cream in top of double boiler. Cook for 10 to 15 minutes over rapidly boiling water, stirring frequently.

Drain lobster; cut into pieces. Add lobster and butter to cream mixture; mix well.

Let stand over hot water for 15 to 20 minutes to heat thoroughly and blend flavors.

4:
Pour into soup bowls; garnish with a thin slice of firm ripe tomato sprinkled with chives. May be garnished with grated lemon rind.
