Eggplant and Celery Croquettes Recipe makes a delicious side dish using eggplant, onion, celery, salt, white pepper, bread crumbs and eggs.


INGREDIENTS
1 Lge. eggplant, peeled
1 med. onion
3 c. diced celery
3/4 tsp. salt
1/8 tsp. white pepper
4 c. soft bread crumbs
2 eggs, slightly beaten
Dry bread crumbs
Oil


DIRECTIONS
1: Dice the eggplant and onion. Combine the eggplant, onion, celery, salt and pepper. Place in a saucepan and add 1 inch boiling water. Cover and cook for 5 minutes. Drain.
 
2: Add the soft bread crumbs and eggs and blend well. Drop by spoonfuls into dry bread crumbs. Roll and shape into balls.
 
3: Fry in deep oil at 375 degrees until golden. Serve with lime wedges and chilled shrimp. May be, frozen before frying.
