Eggplant and Celery Croquettes

Eggplant and Celery Croquettes Recipe makes a delicious side dish using eggplant, onion, celery, salt, white pepper, bread crumbs and eggs.

INGREDIENTS
|
1 Lge. eggplant, peeled
|
1 med. onion
|
3 c. diced celery
|
3/4 tsp. salt
|
1/8 tsp. white pepper
|
4 c. soft bread crumbs
|
2 eggs, slightly beaten
|
Dry bread crumbs
|
Oil
|

DIRECTIONS
|
1:
Dice the eggplant and onion. Combine the eggplant, onion, celery, salt and
pepper. Place in a saucepan and add 1 inch boiling water. Cover and cook for 5
minutes. Drain.

Add the soft bread crumbs and eggs and blend well. Drop by
spoonfuls into dry bread crumbs. Roll and shape into balls.

Fry in deep oil at
375 degrees until golden. Serve with lime wedges and chilled shrimp. May be,
frozen before frying.
