Mexican Rice with Tomatoes Recipe makes a rice dish with a Mexican influence using onion, butter, long-grain rice, pepper, salt, chili powder and tomatoes which complements all Mexican dishes.

INGREDIENTS
|
2/3 cup chopped onion
|
1 tablespoon butter or margarine
|
1 cup long-grain rice, uncooked
|
1 cup chopped green pepper
|
1 teaspoon salt
|
1 teaspoon chili powder
|
1 (8 oz) can tomatoes, diced
|
2 cups water
|
|
|

|
|
|
|
|

|
DIRECTIONS
|
1:
Saute onion in margarine until tender.
|
|
2:
Stir in rice and remaining ingredients; stir to mix well.
|
|
3:
Bring to boil; reduce heat, cover, and simmer 20 minutes or until rice is tender and liquid is absorbed.
