Mexican Rice with Tomatoes

Mexican Rice with Tomatoes Recipe makes a rice dish with a Mexican influence using onion, butter, long-grain rice, pepper, salt, chili powder and tomatoes which complements all Mexican dishes.


INGREDIENTS
2/3 cup chopped onion
1 tablespoon butter or margarine
1 cup long-grain rice, uncooked
1 cup chopped green pepper
1 teaspoon salt
1 teaspoon chili powder
1 (8 oz) can tomatoes, diced
2 cups water


DIRECTIONS
1: Saute onion in margarine until tender.
 
2: Stir in rice and remaining ingredients; stir to mix well.
 
3: Bring to boil; reduce heat, cover, and simmer 20 minutes or until rice is tender and liquid is absorbed.
