Steamed Fresh Black-eyed Peas Recipe uses fresh black-eyed peas, salt and pepper, thyme flakes, rosemary and rubbed sage in making this very tasty black-eye pea recipe.

INGREDIENTS
|
1 lb. fresh black-eye peas (see Note)
|
1 tsp salt
|
1/2 tsp fresh ground black pepper
|
1/2 tsp thyme flakes
|
1/8 tsp rosemary
|
1/8 tsp rubbed sage
|
liquid from steamed peas
|
|

|
|

DIRECTIONS

Note: With this recipe the peas would ideally be steamed. If steaming utensils are not available, the peas may be cooked by placing into a suitable sized skillet, adding liquid to prevent burning, adding other ingredients and cooking over medium heat, stirring frequently, until the peas are tender, approximately 30 minutes.

Steam the peas until not quite tender. Transfer to a large skillet. Add just enough steaming liquid to prevent the peas from drying and burning. Place peas over medium heat.

Add other ingredients and stir well after each addition.

Add more liquid if necessary to prevent peas from burning. Cook until peas are very tender. Enjoy!!
