Steamed Fresh Black-eyed Peas Recipe

Steamed Fresh Black-eyed Peas Recipe uses fresh black-eyed peas, salt and pepper, thyme flakes, rosemary and rubbed sage in making this very tasty black-eye pea recipe.


INGREDIENTS
1 lb. fresh black-eye peas (see Note)
1 tsp salt
1/2 tsp fresh ground black pepper
1/2 tsp thyme flakes
1/8 tsp rosemary
1/8 tsp rubbed sage
liquid from steamed peas


DIRECTIONS
1: Note: With this recipe the peas would ideally be steamed. If steaming utensils are not available, the peas may be cooked by placing into a suitable sized skillet, adding liquid to prevent burning, adding other ingredients and cooking over medium heat, stirring frequently, until the peas are tender, approximately 30 minutes.
 
2: Steam the peas until not quite tender. Transfer to a large skillet. Add just enough steaming liquid to prevent the peas from drying and burning. Place peas over medium heat.
 
3: Add other ingredients and stir well after each addition.
 
4: Add more liquid if necessary to prevent peas from burning. Cook until peas are very tender. Enjoy!!
