Honey-Glazed Roasted Carrots Recipe tosses carrots in a mixture of red chili pepper, fresh ginger, olive oil, kosher salt and pepper before baking then drizzling and tossing with honey before serving this very tasty carrot dish.

INGREDIENTS
|
3 lb. medium carrots, peeled and cut into 3-in. pieces
|
1 red chili pepper (such as fresno or serrano), halved, seeded and thinly sliced
|
1 2-in. piece fresh ginger, peeled and coarsely grated
|
4 T olive oil
|
Kosher salt and pepper
|
3 T honey
|

|
|

DIRECTIONS
|
1:
Heat oven to 400°F. On a large rimmed baking sheet, toss the carrots, chili and ginger with the oil, 3/4 t salt and 1/4 t pepper.

Transfer half the carrots to a second baking sheet. Roast both sheets until the carrots are golden brown and tender, 35 to 40 minutes.

Remove from oven, drizzle the honey over the carrots and toss to combine.
