Honey Glazed Roasted Carrots

Honey-Glazed Roasted Carrots Recipe tosses carrots in a mixture of red chili pepper, fresh ginger, olive oil, kosher salt and pepper before baking then drizzling and tossing with honey before serving this very tasty carrot dish.


INGREDIENTS
3 lb. medium carrots, peeled and cut into 3-in. pieces
1 red chili pepper (such as fresno or serrano), halved, seeded and thinly sliced
1 2-in. piece fresh ginger, peeled and coarsely grated
4 T olive oil
Kosher salt and pepper
3 T honey


DIRECTIONS
1: Heat oven to 400°F. On a large rimmed baking sheet, toss the carrots, chili and ginger with the oil, 3/4 t salt and 1/4 t pepper.
 
2: Transfer half the carrots to a second baking sheet. Roast both sheets until the carrots are golden brown and tender, 35 to 40 minutes.
 
3: Remove from oven, drizzle the honey over the carrots and toss to combine.
