Gingered Turnips Recipe simmers yellow turnips in a broth beef stock, onions, ground ginger, sugar and soy sauce until tender then fluffing with mixer adding cooking fluid to desired consistency.


INGREDIENTS
2 pounds yellow turnips, pared and cubed
1 tablespoon minced onion
1 1/4 cups beef stock
1/2 teaspoon ground ginger
1/2 teaspoon sugar
2 teaspoons soy sauce


DIRECTIONS
1: Combine all ingredients in a saucepan; simmer covered until turnips are tender (about 15 minutes). Drain; mash turnips with potato masher or electric mixer until fluffy; adding cooking liquid as needed for desired consistency.
